FUDGY WUDGY CHOCOLATE COOKIES

I've got this recipe from the magazine that I brought here. I didn't put any nut because my daughter don't eat nut, I put less chocolate because I'm running out of stock of it, I put what I have. When I eat this, I feel like this is something like Mrs. Field's chewy cookies and my husband agree too! He is not a chocolate lover but he like this cookie taste, it's nice!

FUDGY WUDGY CHOCOLATE COOKIES

WET INGREDIENTS:
125gm butter - chopped
1 teaspoon vanilla essence
1 1/4 cups brown sugar
1 egg
***Beat altogether until smooth.

DRY INGREDIENTS:
1 cup plain flour
1/4 cup slef-raising flour
1 teaspoon bicarbonate of soda
1/3 cup cocoa powder
***Sift altogether

1/2 cup raisins
3/4 cup macadamia nuts - toasted & chopped coarsely
1/2 cup dark Choc Bits
1/2 cup dark chocolate Melts - halved
***I used chocolate bar that I chopped coarsely, I didn't use the nuts.

Method :

1. Preheat oven to moderate (170C - 180C)
2. Mix altogether the wet ingredient and dry ingredient.
3.Stir in raisins, nuts and both chocolates.
4. Drop the mixture onto baking tray about 4cm apart, press each with fork to flatten slightly.
5. Bake for 10-12 mins, stand 5 minutes and transfer cookies to wire rack to cool.
